Cookie Bars

If you are looking for a protein packed treat, these cookie bars are for you!

What you need:

1 15 oz can of chickpeas

1/2 cup cashew butter

1/2 cup maple syrup

1 teaspoon vanilla extract

1 tbsp almond milk

1/4 cup oat flour

1/2 tsp b powder

1/2 tsp b soda

3/4 -1 cup of chocolate chips

What to do:

  1. In a blender mix (drained and rinsed) chickpeas, cashew butter, maple syrup, vanilla and almond milk. Puree for about 2 mins.

  2. Pour batter from blender into a bowl. Add oat flour, baking soda, baking powder, and chocolate chips.

  3. Stir until combined then pour into 8 inch square parchment covered pan.

  4. Bake at 350 for about 30 mins (or until checked with a clean toothpick).

  5. Enjoy!
